ReplyDeleteI was wondering if you had anything for the peanut dipping sauce that is used on the spring rolls. I looked and noticed that you only posted up the fish sauce version. Any help would be great because I've tried other site's recipes of it and it never turns out right :/
Also, I made your Bo Luc Luc (spelling?) and loved it. I would suggust that you review your salt content, however. When I followed it exactly, my beef came out very very salty. Once I changed the salt, OMG, it was the BEST BEST BEST.

ReplyDeleteI don't like peanuts and prefer eating spring rolls with nuoc mam so I never make it. My sister wanted a peanut dipping sauce recipe too so I might eventually get to it one of these days.
Did you put 1 teaspoon or tablespoon of salt? 1 tsp salt for 1 lb of meat is my general amount for recipes.
But as I said, feel free to adjust recipes to suit your taste buds.

ReplyDeleteGranted my bottle is a few months old, but it says made in Thailand and processed in Hong Kong. Still tastes like nuoc mam to me. The first ingredient listed is anchovy extract. Now, I know Chinese products are suspect, but I think the USDA would have some restrictions if the product wasn't all it's supposed to be? Reminds me of the soy sauce scare a few years back.
I was wondering if you have a recipe for Canh Bun. I love eating this Vietnamese noodle soup from the restaurant Quan Bun Ban Mai in Westminster, California and always wanted to learn how to make it.

ReplyDeleteI haven't been to Quan Bun Ban Mai, but I did try canh bun at Quan Vy Da. I thought it tasted like a cross between bun bo Hue and bun rieu, both of which I prefer over canh bun.

I will probably spend some time reading your restaurant reviews to find a place nearby with good banh beo--that's really what I've been craving.

My favorite banh beo places in SGV for the kind steamed in the individual chen are Nem Nuong Khanh Hoa and Nem Nuong Ninh Hoa. Quan Mien Trung does it too, but much, much thicker. All are freshly steamed though so they're all good. Kim Hoa Hue does the kind where they're already scooped out onto a plate for you.

I've been searching your site for some time trying to find the (I believe) cassava flour, tapioca skin, chewy dumplings like they had at Co La before it closed. They had shrimp and minced pork inside and fried onion on top. Sooooo good and I don't know any restaurant that has them. Can you help?

ReplyDeleteI can't think of any Vnese dumplings with cassava flour. Not savory ones anyway. Just cassava cake.
If the dumplings had mung beans inside and are opaque, they're most likely banh it tran. Clear tapioca dumplings with shrimp, depending on what region people are from, are called either banh bot loc or banh quai vac. I like the version at Ngu Binh (which I was gonna blog soon). And Quan Hy is good for Central-style dumplings too.
I've never even heard of Co La. Was it a Central-style restaurant? You didn't remember what it was called in VNese?
