Since the last few posts have been about shrimp, I thought this would be a good a time as any for a super quick and simple shrimp recipe. Just a light Vietnamese marinade and a quick saute in butter. Yes, butter. Mmm.

Tom Xao Bo (Vietnamese Shrimp Sauteed in Butter)

For about 1 lb of shrimp, you'll need:
1 lb shrimp, deveined, peeled if you wish
2 to 3 cloves garlic, minced
2 tsp Nuoc Mam (Vietnamese Fish Sauce)
2 tsp sugar
1/2 tsp ground black pepper
2 tblsp butter

Clean and devein the shrimp. If you don't want to peel them, follow my method of how to devein shrimp with a toothpick.

Add 2 cloves minced garlic, 2 tsp fish sauce, 2 tsp sugar, and 1/2 tsp ground black pepper.

In a saucepan on medium-high heat, melt 2 tblsp butter and add all the shrimp and marinade. Saute until shrimp turn pink and are done.

Serve with rice. Or wrap with pork, noodles, and herbs to make Goi Cuon (Vietnamese Salad Rolls). Or serve with grilled pork, noodles, and herbs as part of Bun Thit Nuong Tom (Vietnamese Rice Vermicelli Noodles with Grilled Pork and Shrimp).

  1. I like keeping the head on...it adds extra flavor! My bf and roommate likes that mysterious flavor the shrimp head gives to any dish I make...but they both think it's gross when I actually eat it, hehe.

    It does but I can't eat the eyes! So I just suck out the head guts.

  5. I attempted this recipe for some salad rolls and my boyfriend LOVED them!! He's Vietnamese and I'm white, and I've never quite succeeded in making any Vietnamese food that he thought was really great, but this was a success! Thanks for helping me out! ;)
