While lots of feta is wonderful in a Greek salad, paired with the sweetness of watermelon and basil, a little goes a long way. So crumble just a little, and save the rest for either a Greek salad or Feta Cheeseburgers with Baked Garlic Fries.
Watermelon, Feta, and Basil Salad
For two people, you'll need:
2 cups seedless watermelon, diced
1 tblsp feta cheese, crumbled
6 large basil leaves, julienned
1 tblsp red wine vinegar
Freshly ground black pepper
Dice, crumble, julienne, drizzle, grind. Taste. Adjust.
