I still had a few cups of leftover broth from making Moules Frites (Belgian Mussels with Fries) that I didn't want it to go to waste. The flavor was so tasty that I decided to turn it into a pasta dish, and added shrimp and clams.
Of course, if you didn't make mussels, you can still make this Clam and Shrimp Fettuccine. Just use chicken broth or wine instead. A quick and easy dinner in the time it takes for the noodles to boil.
Italian Clam and Shrimp Fettuccine
For about 4 servings, you'll need:
1 lb fettuccine, boiled and drained.
2 strips bacon, diced
1/2 large onion, diced
2 large tomatoes, diced
1/2 tsp salt
2 scallions, chopped
Dozen shrimp, peeled and deveined
1 lb clams
1 sprig thyme
2 cups chicken broth or white wine
1 cup, cilantro, chopped
Optional: cream or dried chili flakes
Set a pot of water to boil the fettuccine.
Dice 2 strips of bacon and half of a large onion.
In a large pan on medium-high heat, add the diced bacon and onion and saute until the onion starts to soften.
Add two chopped tomatoes and 1/2 tsp salt.
When the tomatoes have started to soften, add the chopped scallions and shrimp and stir.
When the shrimp have turned pink, add the clams. Mix.
Add 2 cups of chicken broth and a sprig of thyme. You can also swap out one of the cups of chicken broth for white wine if you wish. Taste and add more salt if necessary. I actually used the leftover broth from making moules frites so the broth was extra flavorful.
If you want this to be a creamy pasta dish, now is the time to add the cream.
By now, the fettuccine noodles should be ready. Add the fettuccine and chopped cilantro. Toss to evenly mix the noodles and sauce.
Plate and serve.
I added some cream to the leftovers to make a creamy version of this dish.
A liberal sprinkle of dried chili flakes is great too.
