Rice Krispies Treats

A recipe for Rice Krispies treats?! Have I jumped the shark?

But, seriously, I don't know what gets people clicking sometimes. The first time my daily traffic topped 4,000 views was when I posted about In-N-Out Burger and its hidden menu. Kinda figured it was a throwaway post for my non-American readers, but who knew it'd be so popular?

Then that day was upstaged by frying Banh Phong Tom (Vietnamese Shrimp Chips). And it wasn't even a recipe! Just pictures of the shrimp chips frying?!

And then my 2-ingredients Faux Beignets beat that?

So for my non-American readers or the truly kitchen-challenged, a recipe that I've been making since at least middle school age. Not that it's really my recipe, just the basic one that was on the back of the Rice Krispies cereal box. Anyway, since I still had plenty of marshmallows left over from making Campfire S'mores, it was only natural to use them up by making Rice Krispies treats.

Rice Krispies Treats

You'll need:
1 box Rice Krispies cereal
1 bag small marshmallows, although large marshmallows will work too
2 tblsp butter

Melt the butter in a large pan on medium heat.

Add the marshmallows. Small marshmallows melt better, but big ones will work fine too.

They'll quickly melt either way.

Add the Rice Krispies. If you get the extra large box, you might not need it all, so pour out only about half or 3/4 first.

Turn off heat so the marshmallows don't burn. Stir to combine.

I actually prefer less marshmallows, more cereal so it's up to you what consistency you like. I also don't like my Rice Krispies treats too compacted so I only lightly press it into the pan.

Use a spatula to straighten the top.

Allow a few minutes for the Rice Krispies treats to cool before cutting into squares.

Already? Asked my brother's wife since the family was still relaxing after dinner and our trip to the Oregon Coast.

Sure, it only takes five minutes, I said.

That's how it works, my brother told her. All you have to do is ask and I'll make it.

I checked to see if cousin T wanted some too, since we were meeting up with her at Powell's City of Books - Portland later that evening.

Of course she wanted some.

You can also use the Rice Krispies Treats to make Dessert Sushi with Swedish Fish Candy.

Oh, and the cereal box, take a look at it. That was the best part! Lil' sis bought it as a joke, but you bet I ordered one! :)

    Just for fun I've tinted the marshamallow butter mixture with red food coloring to turn it pink, or sometimes I use green, depending on the holiday.

    I know! I tried a packaged one once and it was way too sweet for me.

    Blue of course! The red was a weird burgundy/maroon and the yellow just doesn't look good on anyone.
