Pineapple Fried Rice

I think this recipe has been sitting in my queue long enough. During a photo clearing frenzy, I must have accidentally deleted the step-by-step photos, so I'm using the photos from my Fried Rice Yang Chow-Style recipe. Just pretend the gai lan (Chinese broccoli) in the photos are green onions or cilantro, OK? Well, unless you want to substitute the green onions in my recipe with gai lan.

I'm listing this recipe under Thai because I was inspired by the pineapple fried rice I had at Top Thai Restaurant in San Dimas. Except their version had curry powder and cashews. I added Spam to balance out the sweetness of the pineapples. Hmm. Spam and pineapple, should this fried rice be filed under Hawaiian instead?


Pineapple Fried Rice 1

Pineapple Fried Rice

You'll need:
2 cups day-old rice, or cook a batch of fresh rice and decrease the water by about half a cup
About 1/4 to 1/2 fresh pineapple, or canned, cut into chunks
About 1 cup Spam or char siu (Chinese barbecued pork), diced
About a dozen shrimp or more, peeled and deveined
About 1 bunch green onions and/or cilantro, chopped
3 eggs, scrambled or use my scrambled egg omelet technique
Soy sauce or oyster sauce to taste

Optional: Add cashews or curry powder.

Turn the heat on to high because everything will cook very quickly in the wok. Drizzle a bit of oil, scramble three eggs and set aside. Then add a little more oil again and saute the Spam or char siu and shrimp until the shrimp turns pink.

Add the rice and green onions or cilantro and mix thoroughly until slightly softened. At this point, you can add soy or oyster sauces if you wish. I think the Spam or char siu already has plenty of flavor so I generally don't add too much oyster sauce. Add the pineapple chunks at this point too.

Then add the eggs back in and mix again.

And you've now got a very pretty batch of pineapple fried rice. Red from the meat, pink from the shrimp, yellow from the pineapple, and green from the cilantro and green onions.

  1. Beautiful! I like your pineapple bowl. It is just perfect for fried rice with pineapple. In the restaurants here, they often serve this rice in hollowed out (real) pineapples.

  3. Oh boy! I could dive right into this dish! It looks so delicious! My fave Thai restaurant has Pineapple Fried Rice on the menu and I just love it. The Spam is a great addition too. I'm pushing this to the top of my "to do" list.

    BTW, whenever I make fried rice, I just pick up a carton of plain white rice from my local take out place. It works great and saves a lot of time!

    I use jasmine rice for almost every rice dish.

    Great tip. But cooking rice doesn't take long. If you decrease the amount of water, you can have fresh rice in the amount of time it takes to finish prepping the other stuff. I hope you try the recipe!

  11. Looks like everyone agrees, pretty bowl! Make the rice even more appealing. Love pineapple fried rice.
    But at our last catering gig, we made this and it was a flop! All the juices of the pineapple soaked up in the cold rice...yuck! and it really sucked. It only works at smaller dinners.
