Red (Lingonberry), White (Brie), and Blue(berry) Puff Pastry Tarts

My patriotic dessert for America's birthday were these red, white, and blue puff pastry tarts. The red was lingonberry jam, although strawberry or raspberry jams would work too, white brie, and fresh blueberries.

I was inspired by the apricot brie bites I saw on Old Town Home, but wanted to use fresh puff pastry and Independence Day seemed like the perfect time to get a little creative.

The sweetness of the fruit paired perfectly with the salty cheese, and who doesn't love anything baked in puff pastry?

Inspired by the Apricot Brie Bites by Old Town Home

For two dozen mini tarts, you'll need:
Puff pastry, cut into 2-inch squares
Lingonberry or strawberry or raspberry jam
Brie, cut into slivers
Blueberries

Pre-heat oven to 350 degrees.

Cut puff pastry into 2-inch squares. Spray with oil and line a mini cupcake tin with the puff pastry. Place a sliver of brie in the center, add a dollop of lingonberry jam on one side and a few blueberries on the other.

Since I only had one mini cupcake tin, I also used dipping saucers to bake the puff pastry tarts.

Bake at 350 degrees for about 25 to 30 minutes until the puff pastry is golden.

I thought the dipping saucers would make the mini tarts spread out too much, but I actually liked them much better!

And the mini tarts baked in dipping saucers. The tarts spread out more, so you could see the red, white, and blue better, with just a little curl on the edges so they still look like tarts.

I even plated them on my George Washington dish that I bought at Mount Vernon. Hello to George and Martha!

Couldn't resist popping a few into my mouth while the brie was still warm.

Then I boxed up the tarts and brought them to my cousin's house for Johannes' second birthday party and Fourth of July barbecue.

I helped my cousin order eight pounds of banh cuon (Vietnamese rolled rice noodles with ground pork and mushrooms) from Banh Mi & Che Cali Restaurant - Alhambra.

I didn't know he had also ordered  Bun Thit Nuong (Vietnamese Rice Vermicelli Noodles with Grilled Pork) from Banh Mi My Tho - Alhambra.

Along with a huge order of their sandwiches.

He also made Spam and egg sliders.

And I think the Hainanese chicken rice came from his mom. My red, white, and blue puff pastry tarts are to the side.

    Ever since my cousin's kid was born, I've had pretty good eats on 4th of July!

    I still used muffin pans, just the mini ones, but the dipping saucers worked great. The banh cuon at Banh Mi Che Cali - Alhambra is steamed fresh all day long so it's a good buy there. They sell it by the pound if you order it to-go.
