That's not too long of a wait, right? :P
Quick and easy dinner. Just lightly breaded fish, fried, then a lemony caper sauce. I used one of those $1 frozen tilapia fish packets from Albertson's for this, but if I were to do it now, I'd more likely use frozen basa filets that you can buy in bags of multiples. Otherwise, the recipe is pretty basic and very simple.
Fish Piccata
Adapted from my recipe for Chicken Piccata.
For two servings, you'll need:
Two white fish filets such as tilapia or basa
1 small lemon, juiced
1/4 to 1/2 cup white wine, chicken broth, or water
2 tblsp flour
1 tblsp capers
1/2 tsp salt
Juice 1 lemon. Set aside.
Wash the fish filets. Sprinkle about 1/2 tsp salt on both sides of the fish. Then sprinkle about two tblsps flour on both sides until the fish is thoroughly coated.
In a sauce pan, on medium-high heat, add a good drizzle of olive oil and pan-fry the fish until golden. Remove from the pan and set aside.
Turn the heat down to medium and add the lemon juice, about 1/4 to 1/2 cup of white wine or chicken broth, or just plain water if you have neither, and 1 tblsp capers. Scrap the bottom of the pan with a wooden spoon to loosen the fond, the browned bits and flour, so that a sauce is formed. When the sauce is thickened to your liking, drizzle the sauce over the fish.
I served the fish piccata with some Persian Dill Rice.
