If you love mushrooms as much as I do, sometimes you really don't need much else to enjoy them. A quick saute to soften the mushrooms with some chopped garlic and onions for flavor. Toss with plain pasta.
I used a few portobello mushrooms for this, although they're really just mature crimini mushrooms so you can use those instead if you'd like.
Now, the big question is, do you say portobello mushroom? Or portabella mushroom?
Italian Portobello Mushroom Pasta
For 2 servings, you'll need:
1/2 lb spaghetti or other pasta, boiled and drained
2 large portobello mushrooms or about 8-oz crimini mushrooms, sliced
1 small onion, diced small
2 cloves of garlic, finely minced
1/4 tsp salt
Optional: Garnish with Parmesan cheese or minced parsley.
Set a pot of water to boil the pasta.
While the water is boiling, slice the mushrooms. Set aside.
Dice 1 small onion. Finely mince 2 cloves of garlic. Set aside.
In a saucepan on medium-high heat, drizzle a generous serving of olive oil and add the onion and garlic. When the aromatics have softened, add the sliced mushrooms and 1/4 tsp salt. Saute for a few minutes until the mushrooms have softened to your liking.
Instead of boiling and draining the noodles, I simply scoop the noodles into the sauce. Then toss to mix the pasta with the mushrooms.
Top with Parmesan cheese or parsley if you wish.
