Blueberry Muffins

As I said, once I get stuck on a particular recipe for something, that's it. And really, after looking at the golden crust and juicy blueberries in this recipe for blueberry muffins, why try another? This recipe for blueberry muffins is so good that I only waited five months to share it, as opposed to my usual two years+. :P

The trick was sprinkling sugar on top of the mixture before the muffins go into the oven. Something I tried with my French Cherry Clafoutis recipe with good results. These blueberry muffins are moist from the yogurt in the dough, crispy on the outside from the light sugar dusting on top, and not too sweet so they're perfect for snacks or for breakfast or for anytime.

Blueberry Muffins
Adapted from my recipe for Banana Bread

For 18 to 24 muffins, depending on how you like to fill your muffins, you'll need:
1/2 cup butter, softened at room temperature
1/2 cup white sugar
1/2 cup brown sugar
1 tsp vanilla
2 eggs
1 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup yogurt
12 oz blueberries

Optional: Sugar for sprinkling on top

In a large bowl, beat 1/2 cup butter with 1/2 cup white sugar, 1/2 cup brown sugar, and 1 tsp vanilla.

Beat eggs by adding them in one at a time.

Mix 1 1/2 cups flour, 2 tsps baking powder, 1 tsp baking soda, and 1/2 tsp salt. Gently fold in yogurt.

Add frozen blueberries, or fresh blueberries if you have them.

And mix gently. Make sure the blueberries are fresh from the freezer or they'll melt into the flour and discolor the dough.

Do you like my batter bowl? One of my mom's thrift store finds that she had lil' sis bring down for me.

Spoon into cupcake liners. Lightly sprinkle more sugar on top.

Bake 350 degrees for 20 to 25 minutes. The sprinkled sugar will create this lovely golden crust.

Best enjoyed when they're fresh and warm from the oven.
