Since I used the leftover Char Siu/Xa Xiu (Chinese/Vietnamese Barbequed Pork) to make Chinese Char Siu (Barbecued Pork) Bok Choy Chow Fun (Rice Noodle) Stir-Fry, I needed another batch for this Chinese wonton noodle soup with barbecued pork and bok choy. Considering it's one of my favorite noodle soups, I was reminded that I hadn't blogged a recipe until a Wandering Chopsticks reader (Thanks Tu Anh!) mentioned on my Facebook page that she was making my barbecued pork recipe for just that purpose.

For the wontons, I used the Hoanh Thanh Thit Heo Bam, Dau Hu, Hanh La (Vietnamese Wontons with Ground Pork, Tofu, and Green Onions) that I recently made with the niece and nephew, but feel free to use any wonton recipe of your choice. Then it's just a matter of making a broth, boiling some egg noodles, and blanching some bok choy.

Chinese Bok Choy Char Siu (Barbecued Pork) Wonton Noodle Soup

For 4 servings, you'll need:
Char Siu/Xa Xiu (Chinese/Vietnamese Barbecued Pork)
Hoanh Thanh Thit Heo Bam, Dau Hu, Hanh La (Vietnamese Wontons with Ground Pork, Tofu, and Green Onions) or Shrimp Wontons or other wonton recipe of your choice
Pork or Chicken Broth (If making your own broth, you'll need bones, 1 tsp salt, and 1 tblsp soy sauce.)
1 lb package chow mein or other noodle of your choice
4 baby bok choy, separated and washed

This recipe is best if you've already made the Chinese barbecued pork first obviously. Great way to use up the leftovers. Slice thinly and set aside.

Make the wontons ahead of time too. Boil and drain. Set aside.

You can follow my directions for how to make a simple Vietnamese pork broth or use boxed chicken broth. If you want to make your own, add about 3 quarts of water to a 5-quart stock pot. Add several chicken thigh and drumstick bones, 1 tsp salt, and 1 tblsp soy sauce. Simmer on medium-low heat for about half an hour. Remove the bones and skim the scum until the broth is clear.

Boil the egg noodles and drain.

Time for assembly! Turn the heat on the pot of broth to high so it gets to boiling.

The noodles and wontons have already been boiled and drained. Place them in each bowl with the barbecued pork slices.

When the broth boils, add the bok choy for just a minute to blanch and quickly remove the greens to each bowl. Then ladle the boiling broth into each bowl.

If you're feeling lazy, you can also make packaged ramen and add the barbecued pork and wontons to get a jazzed up instant noodle soup.
