Chipotle Shrimp Tacos

OK, I'm going back to August 2008 for this one. Super quick and easy recipe for chipotle shrimp tacos. For times when you're hungry and want to eat now, or for when you're busy and want to blog now. :P

Chipotle Shrimp Tacos

For 2 to 4 servings, you'll need:
A couple dozen shrimp, peeled
1/4 tsp salt
1 tblsp chipotle paste
1 cup cabbage, thinly sliced
4 tortillas of your choice

Optional: Serve with salsa, or in this case, I made a mixture of salsa and sour cream.

Peel and devein about two dozen shrimp, or you can save time and buy them already peeled. Toss about 1/4 tsp salt over the shrimp. Then mix about 1 tblsp chipotle paste with the shrimp. Set aside.

Thinly slice about 1 cup cabbage. Set aside.

In a pan on medium-low heat, drizzle a bit of oil and then toss in the shrimp and saute. While the shrimp are cooking, warm up the tortillas and make the sauce by adding as much salsa as you'd like into sour cream.

Let everyone assemble their own tacos.

Lay out the tortilla, add cabbage, then shrimp, drizzle sauce.

  1. Another simple but tasty recipe! I've made a variation of this before using canned chipotle peppers with sauce. A little of that sauce goes a long way, whew!

    Yup! Totally used that canned chipotle stuff. It's great in tortilla soup too.

  4. i have also used the canned chipotles in a crock pot with pork, added lemon juice, onions, and carrots...after several hours on high, the meats is great with tacos!
