Turkey Vegetable Soup

Since the only time of year I eat turkey with mashed potatoes and gravy, stuffing, and cranberry sauce is when Thanksgiving comes around, I rather look forward to the leftovers. I eat them as is.

But when the meat has been stripped from the turkey and all I have left is the carcass, it's time for some soup. Not that you need a recipe for this...

Although I do have to say, for a flavorful, but light broth, I like to start at a roiling boil to extract all the impurities and flavor from the bones, then simmer on low for a clear broth.

Turkey Vegetable Soup

For a 5-quart stock pot, you'll need:

Leftover turkey bones
1 tsp salt
Any combination of vegetables you'd like such as cabbage, celery, carrots, onions, corn, tomatoes, potatoes, etc.

Strip whatever meat is still left on the turkey. Set aside.

Fill a 5-quart stock pot with water and when it boils, add the turkey bones. Keep the stock at a roiling boil for about 15 minutes to extract impurities and flavor from the bones. Using a skimmer spoon, remove the foam and gunk.

Turn the heat down to medium-low and allow the stock to simmer for another 15 minutes, or for at least half an hour if you're not in a hurry.

Remove all the bones and keep skimming until the broth is clear. Taste and add salt or fish sauce if necessary.

Add vegetables and leftover turkey meat let the soup simmer for about 20 minutes to half an hour, depending on how soft you like your vegetables.

  1. hi wc! this is also good with rotisserie chicken. it's great for getting rid of vegetables in your fridge. sometimes, i'll add a can of evaporated milk for a creamier taste...for another variation, i've included some elbow macaroni but not too much or else it will absorb too much of the liquid.

    soups are great for rainy days. it's raining right now in Chicago!

    I love using rotisserie chicken bones for vegetable soup too. Great way to get rid of leftovers in the fridge.
