Blackberry Cobbler

A sugar cookie blackberry cobbler because I was too lazy to make a regular cobbler when taking new pictures for this post.

After a dinner of Mom's Banh Xeo (Vietnamese Sizzling Crepes), I brought the blackberries I had picked earlier that day to my cousin's house to make blackberry cobbler for my nephews. They don't even like cobbler they've said, but they love mine.



Oldest nephew was out with lil' sis, second-oldest nephew was in Spain that summer, youngest nephew was out with my cousin and his wife. So that left me and second-youngest nephew.

My how quickly time passes. I was a teenager when second-youngest was born and used to snuggle with him asleep on my chest.

When he was around 5?, I once took them ice skating, or rather the two oldest boys and lil' sis ice skated, and I took second-youngest around the mall with me. We'd go into a clothing store, then a toy store, then a clothing store. Except, there just weren't that many toy stores at the mall, so I went into two clothing stores in a row.

"That's not fair!" he called out. "We're supposed to go into an "auntie" store and then a "nephew" store, but we went into two "auntie" stores!" :P

Or when we stopped by McDonald's and he wanted a "plain cheeseburger" and I didn't know that meant asking for no onions, no pickles.

"I said I wanted a plain cheeseburger!"

As he started pulling out pantry supplies, he told me about his part-time job as a "sandwich artist" and how he'd been working out.

"Punch my stomach, auntie!" :P

I didn't have my usual cobbler recipe on hand, so I asked him to pull up the blog so I could use my pie recipe instead.

He asked me some questions about the blog and then said, "Wow! You're relevant!" Haha. I don't know about that, but it was a sweet remark nonetheless.

He couldn't find any flour so we used pancake mix instead. Are you sure it'll work? he skeptically asked. Yup. Yup.

Pat out the dough into irregular circles or "cobbles" and the messy tops will still be crunchy. It'll work, I assured him.

Oozing sweet fruity filling. Served warm a la mode? Perfect!

By the time everyone came home, our cobbler was done.

My cousin's wife likes to use all clear blue plates and bowls in her kitchen. Obviously, that doesn't work so well for a photo of blackberry cobbler. But she got so into it, that she hunted around her cupboard until she found a white plate on which I could photograph the cobbler.

Now, you know I love pies, but sometimes, a girl needs cobbler.

Cobblers by their very nature are way more forgiving. Pancake mix instead of flour? No problem. I've swapped out half of the regular flour for whole wheat and buckwheat for a healthier cobbler and it still tasted good. A little less butter if you're watching your weight? Still good. Use less sugar in the dough if the fruit is especially sweet that day. Too lazy to make fresh batter but still want warm, oozing fruit? Use pre-made sugar cookie dough. :P

Blackberry Cobbler

For 8-by-8-inch cobbler, you'll need:

For the crust:
2 1/2 cups flour (Substitute half with whole wheat or buckwheat flour if you want to be healthier.)
1 cup or 1 stick butter, cut into cubes
1 egg
1/4 cup very cold water
2 tblsp sugar
1 tsp salt

For the filling:
3 cups blackberries
2 tblsp sugar, or more depending on desired level of sweetness
1 tblsp flour
1 tblsp butter
1/2 tsp cinnamon

Wash the blackberries.

Grease the pan you're planning to use. Add 2 tblsp sugar, 1 tblsp flour, 1 tblsp butter, and 1/2 tsp cinnamon. Mix and set aside.

In a mixing bowl, combine 2 1/2 cups flour, 2 tblsp sugar, and 1 tsp salt. Cut the stick of butter into the flour with a pastry cutter or fork until butter pieces are about pea-sized. Whisk the egg and 1/4 cup cold water together, and then add it to the flour mixture.

Using your hands, form roughly 3-inch circles about 1/2- to 1-inch thick. Lay them all over the top of the blackberries so they form "cobbles." Or if you're especially lazy, spoon out pre-made sugar cookie dough.

Bake in the oven at 350 degrees for about half an hour until cobbler crust is set.

Serve warm or with vanilla ice cream.

Rejoice when nephews declare your blackberry cobbler the best in the world and that they don't like any other cobblers except yours. :P

  1. Wow, those were very plump blackberries! Just by looking at them makes me imagine how sweet they are. I wished you could have taken a picture with ice cream on it.

  2. So that was what those yummy blackberries became :). Looks fabulous even with pancake batter. I've had cobbler with yellow cake mix sprinkled on top and cooked in a dutch oven during camping. So good and so easy!

    I like both photos :). Your old photo would have been even better if you shot the picture at about the same angle as you do now but it's still very nice and vibrant at that. I don't think I've met a sugar cookie dough that was THAT white. It looks like marshmallow!

    The difference between picking them ripe and buying them at the store. :) I did try to take a photo with the blackberries on top of the ice cream but the ice cream melted into a big mess. Sally had it right. On the side!

    The old photo was from September '08 and at my cousin's house so even less control of lighting.

    Sometimes, I don't want a precise recipe. Just toss everything in and I'm good to go. Haha! Thanks for that! Somehow having a teenager tell me I was relevant was pretty darned amusing.
