Banh Cuon Xao Thap Cam (Vietnamese Combination Rolled Rice Noodle Stir-Fry)

More uses for my Ultimate Stir-Fry Sauce! "Thap cam" means combination or a bit of everything in Vietnamese, which I took as an opportunity to clear out my fridge. I cut up plain banh cuon (Vietnamese rolled rice noodles) and stir-fried them with some of my mom's cha ca (Vietnamese fried fish paste), eggs, onions, tomatoes, and green beans and ground pork that had been left over from my Lumpiang Prito (Filipino Fried Egg Rolls).

Make it with anything you wish! That's the whole point of "thap cam." :)

Banh Cuon Xao Thap Cam (Vietnamese Combination Rolled Rice Noodle Stir-Fry)

For a really big pan, you'll need:
A double batch of my Ultimate Stir-Fry Sauce
1-lb package of plain banh cuon (Vietnamese rolled rice noodles), cut into 2-inch sections
1/4 lb ground pork or other meat of your choice
1 small onion, cut into strips
1 tomato, cut into wedges
1/4 lb green beans, French cut
My Scrambled Egg Omelet

Optional: 1/4 lb cha ca (Vietnamese fried fish paste) or ham, cut into strips.

You can find fresh banh cuon in rolled noodles at most Asian grocery stores for a few dollars. These don't need to be boiled, but if you don't have this where you are, substitute with wide rice noodles or a short pasta such as penne or bowties. Obviously, you'll need to boil them first to soften.

Cut into 2-inch sections. Set aside.

Slice and dice the onion, tomato, and green beans. Set aside.

Make my scrambled egg omelet and set aside.

Now you're ready to put everything together.

Add the ground pork to the pan on medium-high heat. Make a quick batch of my ultimate stir-fry sauce in the pan and stir until the pork is cooked.

Add the fish paste strips if you're using them, and all the veggies and stir again.

Stir until the vegetables have softened to your liking and the sauce is evenly distributed.

Add the eggs and rolled rice noodles.

Plate and serve.

  1. Oh, just the looks of it is DELICIOUS. Just had some banh cuon today with some soy sauce, hoisin sauce, black bean sauce, beef, and bittermelon. Quite tasty :) but this one is definitely tasty too!
