There's something so comforting about a bowl of turkey noodle soup. With alphabet noodles, of course. Sometimes stars too. I would say it hearkens back to childhood, but my childhood soups were mostly Vietnamese broths with leafy vegetables.
Sure I've blogged Chicken Noodle Soup before, but this is turkey. Totally different! :P
Turkey Alphabet Soup
For a 3-quart pot, you'll need:
How to Make Turkey Stock
1 cup turkey meat, shredded
2 carrots, diced
3 stalks celery, diced
1 medium onion, diced
Alphabet or any noodle of your choice
salt, to taste
Optional: Add any other vegetables you'd like. In this case, I added some diced radishes.
Homemade turkey stock is best. Shred whatever turkey meat you have leftover.
Dice 2 carrots, 3 stalks celery, 1 medium onion.
In a pot on medium-high heat, drizzle a bit of oil and add the mirepoix. When the vegetables have slightly softened, add 2 quarts turkey broth, turkey, and about a cup of alphabet or other noodles.
Turn the heat down to medium-low and let simmer for about 15 minutes until the noodles have cooked. Taste the soup and add salt if necessary.
