Roasted Tri-Colored Carrots

I saw these gorgeous carrots at the Farmers' Market in Claremont and couldn't resist.

While I normally hate cooked carrots, serving these just as is seemed such a shame. So I decided on another quick and easy roasted vegetable recipe.

Roasted Tri-Colored Carrots

You'll need:
About 1 lb of carrots, preferably baby carrots but if they're big, cut into slices.
1 tblsp brown sugar
2 tblsp butter

Clean and scrub carrots. Sprinkle 1 tblsp brown sugar and about 2 tblsp of butter on top.

Bake in oven at 350 degrees for about 20 minutes until tender-crisp. Serve as a side dish or appetizer.

    Not really. The purple ones were slightly more carroty in flavor, but very, very slight.

  15. I found some purple, yellow, red, and deep orange carrots at the local co-op here in Tallahassee--New Leaf Market. They were organic and only $2.29 a bunch. Talk about great value for great taste! I am presently roasting them with red bell peppers in olive oil oil and Herbs de Provence. They will go alongside my standing rib roast that should be done in.....maybe another 2 hours!
