While I normally hate cooked carrots, serving these just as is seemed such a shame. So I decided on another quick and easy roasted vegetable recipe.
Roasted Tri-Colored Carrots
You'll need:
About 1 lb of carrots, preferably baby carrots but if they're big, cut into slices.
1 tblsp brown sugar
2 tblsp butter
Clean and scrub carrots. Sprinkle 1 tblsp brown sugar and about 2 tblsp of butter on top.
Bake in oven at 350 degrees for about 20 minutes until tender-crisp. Serve as a side dish or appetizer.
Enjoy!

Indeed a colourful medley!
ReplyDeleteGorgeous color!
ReplyDeleteI don't even like carrot, but I wanna try this dish just for the color!
Wow! So colorful. And the photos are picture perfect quality- cool arrangements! Nice glaze and shine on the carrots too. Too bad my local farmers market doesn't have tri-colored carrots.
ReplyDeleteGreat work!
So pretty! We only get the normal orangey carrot here.
ReplyDeletei'm intrigued. love the colours!
ReplyDeletei've been wanting to roast some carrots with orange juice and honey lately...but wish i could have some of those too.
Absolutely gorgeous! What a treat to have so many carrot varieties at your disposal!
ReplyDeleteHow gorgeous is that?! I love your end-cut photo too :-) Did you notice any differences in flavor between the various colors?
ReplyDeleteBeautiful!
ReplyDeleteI looked already (without result) for purple carrots I have seen on some other blog, but now I have to look yellow ones as well... thank you for sharing this.
Margot
never thought i'd say this but MY WHAT GORGEOUS CARROTS!!!
ReplyDeletePretty colors! Yeah, do they taste the same? The tri colored potatoes taste the same to me too.
ReplyDeletePeter,
ReplyDeleteColors makes eating more fun.
Eileen,
The color compensates for being cooked since I'm not a big fan of cooked carrots.
WSL98787,
Thanks! Finding such colorful carrots was a rare treat so I had to snatch them up.
PP,
Ah, but I'll trade you colorful carrots or flower crabs and mantis prawns. :)
Diva,
OJ and honey sound like a great combo also.
Of Vegemite and Miso,
Great name!
Nikki,
Not really. The purple ones were slightly more carroty in flavor, but very, very slight.
Margot,
There's red carrots too. If you click on my four color carrot salad, you can see white and red ones.
Tania,
Haha.
Jeannie,
Yeah, pretty much similar. Very subtle carrotier flavor on the darker colors.
Oh my! They're so pretty! I've only seen the regular ones around here.
ReplyDeleteTBC,
ReplyDeleteThese are pretty rare for me to come upon as well. That's why they're such a sight to behold.
I never knew such color carrots existed! They're beautiful raw, and cooked...

Chew on That
Hillary,
ReplyDeleteThe purple carrots were a new find for me. There's red and white ones too if you click on my four color carrot salad recipe link.
I found some purple, yellow, red, and deep orange carrots at the local co-op here in Tallahassee--New Leaf Market. They were organic and only $2.29 a bunch. Talk about great value for great taste! I am presently roasting them with red bell peppers in olive oil oil and Herbs de Provence. They will go alongside my standing rib roast that should be done in.....maybe another 2 hours!
ReplyDeleteRachel,
ReplyDeleteI think my bunch of carrots cost me about $2 too? I'll have to try roasting carrots with herbs de Provence. How fancy! And rib roast too!
Beautiful carrots! They look delicious roasted too.
ReplyDeleteLisa,
ReplyDeleteThanks. I'm always amazed by nature's beauty.
Lovely! Those look so delicious, might have to stop by my farmers market this Saturday and get me some!
ReplyDeleteAubrey,
ReplyDeleteI hope you find some! I haven't seen them in a while myself.
Hard to believe that colored carrots aren't more readily available!
ReplyDeleteJason,
ReplyDeleteColored carrots are still quite a novelty!
They were delicious! thank you.
ReplyDeleteK,
ReplyDeleteAwesome! This is such an old recipe, so it's nice to see it get some play. :)
