Grilled Cheese Sandwich with Hatch Green Chilies

While I love the basic Grilled Cheese Sandwich, especially with a bowl of Cream of Tomato Soup, sometimes it's nice to kick things up a notch. Like a Grilled Cheese Sandwich with Hatch Green Chilies. Perhaps served with Thai-Style Pumpkin Carrot Coconut Curry Soup?

For one sandwich, you'll need:
2 slices of bread of your choice
A thick slice or two of the cheese of your choice
1 or 2 tblsps Hatch green chilies
Butter

Not that anyone really needs directions on how to make a grilled cheese sandwich, but this is how I like to make mine.

Toast 2 slices of bread.

Melt some butter in a pan on medium heat.

Place one slice of bread in the pan and add whatever cheese you'd like. I used a nice white cheddar with peppers.

Add 1 or 2 tblsps of Hatch green chilies.

Then place the other slice of bread on top. Cover the pan for a few minutes to let the cheese melt.

Flip the sandwich so the other side gets toasty. Sometimes the cheese isn't as melted as I like and if I don't want the sandwich to get burnt, I cheat and pop it in the microwave for about 20 seconds.
