After cooking the filet mignon, I received as a sample via one of my advertisers, Foodie Blogroll, courtesy of Certified Steak and Seafood Company, in a French Red Wine Shallot Sauce, I was eager to come up with a recipe for the sea bass. Since the beef was so fresh, I figured the fish would be too so I didn't want to cook anything that would disguise its flavor. I simply pan-fried the sea bass and served it with a stir-fry. The fish was so juicy and flavorful that I made it again the next night. Nothing fancy, but a tasty, healthy, and quick dinner.

Sea Bass with Mushroom, Cabbage, and Zucchini Stir-Fry

For 2 servings, you'll need:
2 sea bass filets, or any other fish of your choice
8 oz beech mushrooms or any other fresh mushroom of your choice
4 shiitake mushrooms, soaked and thinly sliced
1 zucchini, julienned
3 napa cabbage leaves, thinly sliced
Montreal Steak Seasoning or any other flavored salt of your choice
2 tsp Oyster Sauce or my Ultimate Stir-Fry Sauce

Soak the shiitake mushrooms. Prep and slice all vegetables. Set aside.

Sprinkle a bit of Montreal Steak Seasoning on the fish. Drizzle a bit of oil into a pan and pan-fry on medium heat.

Meanwhile in another pan on medium-high heat, drizzle a bit of oil and toss in all the vegetables. Add a bit of oyster sauce and Sriracha chile sauce, or make up my Ultimate Stir-fry Sauce if you'd like.

In a few minutes when the fish is opaque about half-way up the filet, flip it over and continue pan-frying. That's a splatter guard you see in the background, in case you didn't know. Helps keep oil splatters to a minimum when frying.

Give the vegetables a quick stir. They should be cooking down about now. Season to taste if needed.

When the fish is done, the vegetables should be too. Plate and serve with rice.

    I keep it simple and generally just pan-fry or steam fish. The sea bass was sooo good.
