Day 26 Banh Tet Chuoi
Banh Tet Chuoi (Vietnamese Sticky Rice Cakes with Bananas), steamed in banana leaves, $1.50 from Banh Mi and Che Cali in Alhambra. Anyone know how come baby bananas turn red after steaming?     The bananas taste like normal baby bananas. I'm just not sure why they change color.

  6. Mm,I know there are some types of bananas whose meat turns pinkish-red upon ripening, but I have no idea why it would turn red upon steaming. Could be the potassium in it? But that doesn't make sense, either.
    So, basically, I'm not sure why. And am evidently showing my lack of knowledge in this field..oh my.

    Thanks for being equally mystified with me? Hehe. I like your suggestion of potassium, but then how come my banana bread doesn't turn red? Can steaming and baking really be that different?

  8. Don't feel bad about not knowing why. Peg Bracken has a recipe for Banana Jam in her "I Hate to Cook" cookbook, and she warns - somethimes the bananas will turn pink when you cook them, sometimes they will not.

    Either way, it's very tasty, which makes me want to try your banana treat even more!

    I've never seen it for sale. I'd never heard of it before either until this recipe. It's very sweet but I have friends who ADORE it.

    Anyway, maybe Peg Bracken made the recipe up. if so, wow, kudos to her!
