Cream of Tomato Soup


Of course, no grilled cheese sandwich is complete without cream of tomato soup to dip it in. Lil' sis just pops open a can of Campbell's, which tastes like watery tomato paste to me. Blech! So of course, I make my own. Is it a little weird that I like my cream of tomato soup with small tomato bits? I love tomatoes. I love tomato skin. I love those slimy tomato seeds. And I love tomato flavor so light on the cream for me please.

Cream of Tomato Soup

For one small pot, you'll need:

A few large fresh tomatoes, diced, if you have it, or 1 can of diced tomatoes if you don't
1 small onion, diced
3 cloves or more of garlic, minced
1-2 tblsp cornstarch
As much milk or cream as you'd like
Salt, to taste

On medium heat, saute onions and garlic in olive oil until translucent. Add diced tomatoes. Cover the pot and let simmer until the tomatoes start turning into liquid. Turn off stove and let mixture cool, unless you like working with boiling hot liquid. If you have a hand immersion blender, food processor, or blender, puree until smooth.

Heat up mixture on medium-low. Dissolve 1 tblsp of corn starch in 1 cup milk or cream and slowly add it to the tomato soup. Add more milk or cream if you wish. Salt to taste.

Enjoy! With a grilled cheese sandwich, of course. ;)

  2. The soup sounds delicious! For a quick fix, I like Trader Joe's cream of tomato soup or Amy's tomato bisque. Yum!

    And I'm glad to hear that you and your sister are well!

  3. I haven't had a cream of tomato soup that I didn't like...and I LIKE Campbell's version! haha.

    Mmm...this and the grilled cheese are simple, yet delectable comfort foods.

  5. yum yum yum looks so delicious! sometimes i just put tomato in my grilled cheese sandwich to get a similar taste without the work of actually making soup.
