There are the text messages I keep because they make me happy. Like when lil' sis declared that I was the best sister in the entire world. Or when she said she loves me more than I'd ever know, even when she's acting mean or cranky.
And then there's the text message I keep because I get a good chuckle every single time I see it.

"Hey CB what are some other veggies I like besides bok choy that I can stir fry?"
Bwahaha!
So I texted back and told lil' sis that she also likes bean sprouts, broccoli, and spinach. And so when she was home during Thanksgiving weekend in 2008, I made her a stir-fry of her favorite noodle banh uot/ho fun (Vietnamese/Chinese rice noodle sheets) with beef, broccoli, bok choy, bean sprouts, and spinach. Darn that spinach or it'd be a veritable feast of BBBBBs.
Banh Uot Xao Bo (Vietnamese Wet Rice Noodle Sheet Stir-fry with Beef), Bok Choy, Broccoli, Bean Sprouts, and Spinach
For a very large wokful, you'll need:
1 16-oz package banh uot/ho fun (Vietnamese/Chinese rice noodle sheets)
1/4 lb beef, cut into strips
About 2 cups bok choy, cut into 2 inch pieces
About 2 cups bean sprouts
About 2 cups broccoli, cut into sections
1 bunch spinach, washed and cut into 3 inch pieces
My Ultimate Stir-Fry Sauce or any other sauce of your choice
Slice the beef and make a double batch of the ultimate stir-fry sauce to use as a marinade. Set aside.
Wash and cut all the vegetables. Set Aside.
Separate the rice noodle sheets. Set aside.
In a wok on high heat, add the beef, sans marinade.
When the beef is nicely charred, add in all the broccoli, bok choy, and spinach. Add the rest of the stir-fry sauce and toss until the harder vegetables are softened to your liking.
Then add the bean sprouts. Lil' sis got so excited that she even helped cook.
Toss the vegetables again.
Then add the rice noodle sheets.
Plate and serve.
